CITY OF MELROSE PROTECTION AND LICENSE COMMITTEE CALENDAR● NOVEMBER 16, 2015 Aldermanic Chamber Committee Meeting 7:30 PM The public should take notice that the Melrose Board of Aldermen may, on certain occasions, have a quorum in attendance due to standing committees of the Board of Aldermen consisting of both voting and non-voting members. With us this evening from the committee is Vice Chairman Monica Medeiros, Ward 2 Alderman Lemmerman, Ward 4 Alderman Boisselle, and also Ward 5 Alderman Gail Inferno. in accordance with the Massachusetts general laws this meeting is being recorded for future broadcast either on MMTV or the city website do we have a motion to open the floor for public participation Alderman Inferno moves seconded by Alderman Boisselle all in favor opposed do we have anybody from the public who wants to come forward and speak seeing on motion to close public participation alderman inferno moves uh seconded by alderman Boisselle

▶ 2:03 Mary Beth McAteer-Margolis: alderman medeiros beat you to it but she didn't uh all in favor of suspending the rules aye aye opposed so uh would the applicants like to come forward and please uh introduce yourselves hi i'm elizabeth osiel this is my husband joseph hi good evening we are trying to open up next door for wood and fire um it's a brick oven pizza it's going to be kind of higher end um we're going to have appetizers salads we apply for beer and fine it does appear as though your application is in order you have your insurance you have it signed off by all of the necessary municipal authorities anybody on the committee have any questions Alderman Medeiros thank you thank you welcome have you done any restaurants my husband had a restaurant
▶ 3:06 I had a restaurant for 10 years in Allenton, and I decided to just go up a little bigger place. So, that's my next goal in life. We're looking forward to it. Thank you. Thank you. Would you like to tell us your hours of operation and when you think you might be opening? Right now, we plan on doing Monday through Saturday, 11 to nine on Monday through Thursday, and Friday, Saturday through 10 o'clock. Okay, and you have applied for your beer and wine license? Yes, ma'am. Correct, okay. Any further questions from non-committee, Alderman Mortimer? Thank you very much. Since we have a little bit of time before we have our quarter of eight start, I don't feel bad about filling a little air time with some interesting banter with the applicants.
▶ 3:57 Peter D. Mortimer: Do you have any relatives in Melrose? There's an Arcelo who lives on our first street. No relation? No. No relation whatsoever? I'm going to judge whether the answer's interesting or not. You'll be the judge of that? You're going to judge what's interesting or not? The peanut gallery from President Kahn there. This restaurant that you're proposing to open is in the ward I represent, ward six. We're really happy to have you aboard. Thank you. Are you going to use oak in the fire? Are you actually going to have a fire? All kill and dry, all from me and the . It's wood specially dried just for ovens. The company we deal with actually do restaurants, they do a lot of restaurants in Boston and so forth.
▶ 4:38 Peter D. Mortimer: Yeah, so is it oak? You put the oak into the oven first? I think it is oak, yeah. Yeah, well that burns the hottest. Yes. Yeah. The oven reaches 900 degrees. Right. So pizza's cooked in about 90 seconds. Well speaking of 900 degrees, you anticipated my next question, which is do you have the infrared gun that shoots the red laser beam inside? And then you know when the oven has reached the temperature of 900 degrees. Exactly. It shoots like a little red laser. Right. Yep. Just like the laser pens, but except it tells you with this end what the temperature inside the oven is. Exactly. And that works very well. Yes, it does. Yeah. And then it makes the pizza. Here comes some free advertising for you.
▶ 5:18 Peter D. Mortimer: That makes the pizza taste great because you have the smoky oak taste. Exactly. Like oak barrels that they have for certain beverages that make it taste better. Yep. And then you have the oak, and the smell of that oak smoke gets into the pizza, and it is heavenly. It's going to taste divine. Anybody who's out there listening in TV land from MTV here, MMTV, not MTV, should make sure they get to taste this kind of pizza because it's delightful. It's very, very good. Thank you. And I'd just like to tell Mr. or the Alderman Mortimer that Ward 6 is on the south side of Essex Street. And the north side where the restaurant is in Ward 4. Just to make that clear and distinct in that aspect of it. So you must be Ward 4. I'm Ward 4. No territorial fights here now, gentlemen. Motion to recommend. Second. And once again, you are at 35-37 Essex Street, which is pretty much across the street from Shaw's, right?
